Ingredients

  • 1 lb. ground chuck
  • 1 Tbsp. oil
  • 1 clove garlic
  • 3/4 c. uncooked instant rice
  • 1 large onion
  • 1/2 c. chopped green pepper
  • 1 tsp. chili powder
  • 1 (16 oz.) can tomatoes
  • 1 (16 oz.) can kidney beans
  • 1/4 lb. Cheddar cheese
  • salt to taste

Instructions

  1. Combine ground chuck, oil, garlic, salt, rice, onion, green pepper, chili powder, and tomatoes; mix in beans last.
  2. Pour the mixture into a greased 2-quart casserole dish.
  3. Bake at 350°F (175°C) for 50 minutes.
  4. Remove from oven, top with cheese, and bake for an additional 5 minutes until cheese melts.
