Ingredients

  • 1 Tbsp. olive oil
  • 1 medium white onion, thinly sliced
  • 1 lb. ripe tomatoes, chopped
  • 1 (3 lb.) fresh or canned jalapenos, seeded and minced
  • 3 c. bottled clam juice
  • 3 c. unsalted chicken broth
  • 1 tsp. dried marjoram or oregano
  • 1 lb. medium shrimp, shelled and deveined
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a pot.
  2. Add the sliced onion and cook until softened, about 3 minutes.
  3. Add chopped tomatoes and minced jalapenos; cook for 3 minutes.
  4. Add clam juice, chicken broth, and dried marjoram; bring to a boil.
  5. Reduce heat and simmer for 5 minutes.
  6. Add the shrimp and simmer for about 5 minutes, until they are pink, loosely curled, and opaque.
  7. Serve with lime wedges.
