- Combine 1 cup of brown sugar and eggs in a bowl.
- Beat well until smooth.
- Add hot water and beat again.
- In a separate bowl, mix flour, baking powder, and vanilla.
- Add the dry ingredients to the wet mixture and mix well.
- In a heavy saucepan, combine remaining brown sugar and butter.
- Heat until the sugar is melted and caramelized.
- Pour the caramel mixture into the bottom of a 9 x 9-inch cake pan.
- Add the fruit evenly over the caramel layer.
- Pour the batter over the fruit.
- Bake at 350°F (175°C) for 30 minutes.
- Remove from oven and immediately invert the pan onto a serving platter.
- Serve warm with milk.
