Ingredients

  • 2 cups brown sugar
  • 4 eggs
  • 3 tablespoons hot water
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 3 tablespoons butter
  • 2 cups fruit

Instructions

  1. Combine 1 cup of brown sugar and eggs in a bowl.
  2. Beat well until smooth.
  3. Add hot water and beat again.
  4. In a separate bowl, mix flour, baking powder, and vanilla.
  5. Add the dry ingredients to the wet mixture and mix well.
  6. In a heavy saucepan, combine remaining brown sugar and butter.
  7. Heat until the sugar is melted and caramelized.
  8. Pour the caramel mixture into the bottom of a 9 x 9-inch cake pan.
  9. Add the fruit evenly over the caramel layer.
  10. Pour the batter over the fruit.
  11. Bake at 350°F (175°C) for 30 minutes.
  12. Remove from oven and immediately invert the pan onto a serving platter.
  13. Serve warm with milk.
