Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 (6 oz.) package diced dried mixed fruit
  • 1 egg
  • 1/8 teaspoon cinnamon
  • 1 1/4 cups Quaker oats
  • 1 teaspoon baking powder
  • 1/3 cup margarine
  • 1/2 cup skim milk

Instructions

  1. Preheat oven to 375°F.
  2. Combine flour, oats, sugar, baking powder, and salt in a mixing bowl.
  3. Cut in margarine until mixture resembles coarse crumbs; stir in dried mixed fruit.
  4. In a separate bowl, beat egg slightly and mix with skim milk.
  5. Add the egg and milk mixture to the dry ingredients, stirring until moistened.
  6. Shape the dough into a ball.
  7. Turn out onto a lightly floured surface and knead gently 6 times.
  8. Pat out the dough into an 8-inch circle on a lightly greased cookie sheet.
  9. Score the circle into 12 wedges with a sharp knife and sprinkle with cinnamon-sugar mixture.
  10. Bake for 20 to 25 minutes or until golden brown.
  11. Break apart and serve warm.
