Ingredients

  • vegetable cooking spray
  • 1/3 cup margarine
  • 3/4 cup sugar
  • 1/2 cup egg substitute
  • 1 3/4 cups all-purpose flour
  • 2 3/4 teaspoons baking powder
  • 1 cup mashed bananas
  • 3/4 cup coarsely chopped mixed dried fruit

Instructions

  1. Coat an 8 1/2 x 4 1/2 x 3-inch loaf pan with vegetable cooking spray; set aside.
  2. Beat margarine at medium speed with an electric mixer until creamy.
  3. Gradually add 3/4 cup sugar, beating well.
  4. Add egg substitute, beating until mixture is blended.
  5. Combine all-purpose flour and baking powder.
  6. Add to butter mixture and beat at low speed until blended.
  7. Stir in mashed bananas and coarsely chopped mixed dried fruit.
