Fry Pan Cookies are sweet, chewy treats with dates, nuts, coconut, and crunchy cereals, perfect for a quick snack or dessert that appeals to all ages.

Ingredients

  • 3/4 cup sugar
  • 1 cup chopped dates
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped nuts
  • 1 cup corn flakes
  • 1 cup Rice Krispies
  • 1/2 package (4 oz.) shredded coconut

Instructions

  1. In a heavy skillet, mix sugar, chopped dates, and well-beaten eggs.
  2. Cook over medium heat until the mixture pulls away from the sides of the pan, about 5 minutes.
  3. Cool for 3 minutes, then add vanilla and chopped nuts.
  4. Mix well and carefully work in the cereal (corn flakes and Rice Krispies).
  5. Dampen hands in cool water and roll the mixture into small balls, then roll them in coconut.
