Ingredients

  • 1 stick oleo (butter)
  • 3/4 cup sugar
  • pinch of salt
  • 2 eggs
  • 1 cup chopped dates
  • 2 cups chopped pecans
  • 1 teaspoon vanilla
  • 2 cups Rice Krispies
  • 1 cup Angel Flake coconut

Instructions

  1. Melt butter (oleo) in a saucepan over low heat.
  2. Mix sugar, beaten eggs, salt, and chopped dates into the melted butter.
  3. Cook the mixture until thick and mash the dates while cooking, about 10 to 15 minutes.
  4. Remove from heat and add chopped pecans and vanilla extract.
  5. Stir in Rice Krispies until well combined.
  6. Spoon out the mixture and roll into balls about an inch in diameter.
  7. Roll each ball in angel flake coconut to coat.
