Ingredients

  • 4 medium green peppers
  • 1 (10 3/4 oz.) can cream of broccoli soup
  • 1/4 cup milk
  • 1 1/2 cups cooked rice
  • 1 1/2 cups diced cooked chicken
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/4 cup chopped red or green peppers
  • 1/4 cup finely chopped celery
  • 1/2 cup cheese cracker crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Cut the green peppers in half lengthwise and place them in a 13 x 9 x 2-inch baking dish.
  2. Cover the dish with plastic wrap and microwave on High for 5 minutes to soften the peppers.
  3. Set the peppers aside after microwaving.
  4. In a bowl, combine the cream of broccoli soup and milk; stir until smooth.
  5. Add the cooked rice, diced cooked chicken, shredded Cheddar cheese, chopped red or green peppers, and chopped celery to the soup mixture. Mix well.
  6. Divide the chicken and rice mixture evenly among the prepared pepper halves.
  7. Sprinkle the cheese cracker crumbs over the filled peppers.
  8. Drizzle the melted butter over the cracker crumbs.
  9. Bake in a preheated oven at 350°F (175°C) for 25 minutes until heated through and golden on top.
