Fuzzy Cookies are delightful no-bake treats combining dates, nuts, and cereals with a hint of vanilla and coconut, perfect for a sweet, chewy snack or dessert.

Ingredients

  • 1 cup white sugar
  • 1 cup chopped dates
  • 1 egg
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
  • 2 cups Rice Krispies
  • 1 cup corn flakes
  • 2/3 cup nuts
  • 1/2 cup coconuts

Instructions

  1. Cook sugar, chopped dates, beaten egg, and melted butter over medium heat in a heavy pan until blended and thickened.
  2. Cool the mixture well and then add vanilla extract.
  3. Stir in Rice Krispies, corn flakes, nuts, and coconuts until evenly combined.
  4. Shape the mixture into balls and roll them in additional shredded coconut.
  5. Note: These cookies can be made diabetic-friendly by eliminating sugar in the dates and using sugar-free coconut.
