Ingredients

  • Spinach-Rice Stuffing
  • 3 (20 to 24 oz.) Rock Cornish game hens
  • 4 Tbsp. butter or margarine
  • 1 green onion, minced
  • 1 Tbsp. finely chopped parsley

Instructions

  1. Prepare Spinach-Rice Stuffing.
  2. With kitchen scissors, cut hens in half lengthwise.
  3. Rinse and pat dry the hens.
  4. Press 3/4 cup of the stuffing onto the cut side of each hen half.
  5. Hold the stuffing in place with your hand and arrange the hens, skin side up, in a greased shallow baking pan.
  6. Melt butter in a small pan over low heat; stir in minced green onion, chopped parsley, mustard, and fines herbes.
  7. Brush the butter mixture over the hens.
  8. Bake, uncovered, in a 375°F (190°C) oven for 45 to 60 minutes or until the leg joint moves easily.
  9. During the last half-hour of baking, baste occasionally with pan drippings.
