A creamy, cheesy scallop casserole layered with tender carrots and crispy French-fried onions, perfect for family dinners or special occasions, offering comforting flavors with a spring twist.

Ingredients

  • 4 cups sliced carrots
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons flour
  • 2 tablespoons melted butter
  • 1 cup milk
  • 1 cup diced American cheese
  • 1 can French-fried onions

Instructions

  1. Cook carrots in salted water until tender; drain.
  2. In a saucepan, stir flour into melted butter. Gradually add milk, cooking and stirring until the sauce thickens. Add diced American cheese and stir until melted.
  3. Place one-third of the cooked carrots in a 1 1/2-quart casserole dish.
  4. Top with one-third of the French-fried onions.
  5. Repeat layers of carrots and onions, reserving one-third of the onions for topping. Pour cheese sauce over the layered vegetables and onions.
  6. Bake uncovered at 350°F (175°C) for 15 minutes.
  7. Sprinkle remaining onions over the casserole.
  8. Bake for an additional 5 minutes.
  9. Serve hot.
