Ingredients

  • 2 large cucumbers
  • 2 large firm tomatoes
  • 1 large onion
  • 6 stalks celery
  • 1 large carrot
  • 1 large green bell pepper
  • 1 cup sugar
  • 1/2 cup white vinegar
  • salt
  • pepper

Instructions

  1. Dice all vegetables into small pieces.
  2. Place the diced vegetables in a large bowl and cover with 1 cup of sugar.
  3. Let the mixture stand for 15 minutes to allow the sugar to draw out moisture.
  4. Add 1/2 cup of white vinegar and toss lightly to combine.
  5. Season with salt, pepper, and 1 teaspoon of celery seed, mixing well before serving.
