Ingredients

  • 12 red potatoes
  • 1/2 cup skim milk
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 onion, diced
  • 1 to 2 tablespoons parsley, minced
  • 8 to 12 slices Canadian bacon, cooked and diced
  • 3/4 cup low-fat Cheddar cheese, grated
  • 1/3 cup low-fat margarine, melted
  • salt and pepper

Instructions

  1. Preheat oven to 400°F.
  2. Boil potatoes with skins for about 20 to 25 minutes or until tender.
  3. Drain and cool.
  4. Dice potatoes with skins into bite-sized pieces.
  5. Spoon potatoes into a 9 x 13-inch casserole dish.
  6. Moisten the potatoes with skim milk.
  7. Combine diced green pepper, red pepper, onion, parsley, cooked Canadian bacon, and grated Cheddar cheese.
  8. Spread the pepper mixture over the top of the potatoes.
  9. Drizzle with melted margarine.
  10. Season with salt and pepper.
  11. Bake uncovered at 400°F for 30 to 35 minutes.
