Ingredients

  • 1 lb. fresh green beans
  • 1 lb. boneless chicken, cooked
  • 1/2 lb. medium shrimp, cooked
  • 4 cloves garlic
  • 1 tsp. salt
  • 1 tsp. Dijon mustard
  • 1 c. salad oil
  • 2 Tbsp. lemon juice
  • 1 bunch romaine lettuce
  • 2 large tomatoes
  • 1/2 lb. fresh mushrooms

Instructions

  1. Cook green beans in boiling water for about 6 minutes until tender but crisp. Drain well and chill.
  2. If the chicken has skin, remove it and cut the meat into bite-sized pieces. Set aside and chill.
  3. Shell and devein the shrimp; chill.
  4. In a small bowl, mix minced garlic, salt, Dijon mustard, salad oil, and lemon juice to prepare the dressing.
  5. Arrange lettuce, tomatoes, and sliced mushrooms on a serving platter.
  6. Add the chilled green beans, chicken, and shrimp on top of the vegetables.
  7. Drizzle with the prepared garlic dressing just before serving.
