Ingredients

  • 6 medium potatoes
  • 1 garlic clove, minced
  • 6 Tbsp. butter or margarine, divided
  • 1 c. whipping cream
  • 1 tsp. dried parsley flakes
  • 1 tsp. dried tarragon
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Peel and cut the potatoes into chunks.
  2. Boil the potatoes in salted water until tender, about 15 minutes.
  3. While potatoes are boiling, melt 2 tablespoons of butter in a small saucepan over medium heat.
  4. Add the minced garlic to the butter and cook until fragrant, about 1 minute.
  5. Drain the cooked potatoes and return to the pot.
  6. Add the garlic butter mixture, remaining butter, whipping cream, dried parsley flakes, dried tarragon, salt, and pepper to the potatoes.
  7. Mash until smooth and creamy.
  8. Adjust seasoning as needed and serve hot.
