Ingredients

  • 8 slices white bread, with crusts removed
  • 1 1/2 cups milk
  • 1/4 pound sweet butter
  • 1/2 cup sugar
  • 4 egg yolks
  • 2 tablespoons grated orange rind
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/2 cup seedless raisins
  • 4 egg whites

Instructions

  1. Cut the crust off the white bread slices.
  2. Place the bread in a bowl and add milk.
  3. In a separate bowl, cream the butter until light and fluffy.
  4. Add sugar to the butter and beat until smooth.
  5. Add egg yolks one at a time, beating after each addition.
  6. Stir in grated orange rind, nutmeg, cinnamon, seedless raisins, and the bread mixture.
  7. Blend everything together with a wooden spoon.
  8. In a clean bowl, beat the egg whites until soft peaks form.
  9. Gradually add 1/4 cup of sugar to the egg whites and beat until stiff peaks appear.
  10. Gently fold the egg whites into the bread mixture.
  11. Pour the mixture into a buttered square baking pan.
  12. Sprinkle generously with sugar on top.
  13. Place the pan into a larger pan filled with warm water.
  14. Bake in a preheated 325°F oven for 40 to 50 minutes or until a knife inserted in the center comes out clean.
  15. Serve hot or cold with sauce.
