Gazpacho Sandwich
Ingredients
- 1/2 cup crumbled feta cheese ⓘ
- 3 tablespoons good quality extra-virgin olive oil ⓘ
- 2 tablespoons sherry vinegar ⓘ
- 2 teaspoons Dijon mustard ⓘ
- 1/8 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt ⓘ
- 1 shallot, chopped ⓘ
- 1 round loaf sourdough bread, cut into 1/3-inch-thick slices ⓘ
- 3 to 4 ripe tomatoes, thinly sliced ⓘ
- 1/4 teaspoon kosher salt ⓘ
- 1 medium cucumber or 1/2 English cucumber, peeled and sliced into thin rounds ⓘ
- 1 yellow pepper, sliced into thin strips ⓘ
- 2 cups arugula
- 1/4 cup roughly chopped fresh basil ⓘ
Instructions
- For the feta spread: Combine the feta, olive oil, vinegar, mustard, pepper, salt and shallot in the bowl of a food processor.
- Process until smooth.
- For the sandwich: Preheat a grill pan over medium-high heat.
- Grill the bread until golden brown on both sides, 2 to 3 minutes per side.
- Spread each slice of bread with some of the feta spread.
- Fan the tomatoes over half of the bread slices and sprinkle with half of the kosher salt.
- Next, fan the cucumber slices over the tomatoes.
- Scatter the peppers over the cucumbers; top with arugula, basil and cilantro.
- Sprinkle with the pepper and the remaining salt.
- Cover with another slice of bread.
- Cut each sandwich in half and serve.
