Ingredients

  • 1 (9 to 12 lb.) brisket, trimmed
  • 1/2 bottle liquid smoke
  • 1 cup Lea & Perrins
  • meat tenderizer
  • onion powder
  • garlic powder
  • celery salt

Instructions

  1. Trim as much fat as possible from the brisket.
  2. Place the brisket in a 10 x 14-inch pan.
  3. Pour liquid smoke and Lea & Perrins over the meat.
  4. Sprinkle meat tenderizer, onion powder, garlic powder, and celery salt on both sides of the brisket.
  5. Cover the pan with foil and marinate in the refrigerator for at least 4 hours.
  6. Bake, covered, at 200°F (93°C) for 12 hours.
