  • 1 quart milk
  • 3/4 cup milk
  • 1 stick oleo

  • 1 can mushroom soup

  3. Add wide noodles and cook about 10 minutes until they start to get tender.
  4. Add mushroom soup to the noodle mixture.
  5. Separately, scald 1 quart of milk; do not stir much.
  6. Add flour to 3/4 cup of milk, then stir into hot milk to thicken.
  7. Add oleo and cheese to the thickened milk.
  8. When the cheese melts, add the milk mixture to the noodle mixture, then add the boned chicken.
  9. Put the mixture into casserole dishes or other containers and bake at 350°F for about 30 minutes, until browned or bubbling.

Tips & Substitutions

For a richer flavor, consider adding sautéed garlic or mushrooms to the broth with the onion and green pepper. If you don't have oleo, butter or margarine can be used as a substitute. You can also replace wide noodles with whole wheat or gluten-free options for dietary preferences. For a creamier texture, try incorporating cream cheese into the milk mixture.

Serving Suggestions

Genoa Hervey's Tetrazzini is delicious on its own, but pairs beautifully with a crisp green salad or steamed vegetables for a complete meal. Consider serving it alongside garlic bread to soak up the creamy sauce. For a heartier side, roasted asparagus or a fresh tomato salad complement the dish well.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a preheated oven at 350°F until heated through, about 20-25 minutes, or microwave in individual portions until warm. Adding a splash of milk while reheating can help restore moisture.
