Georgia Peach Chutney combines sweet, spicy, and tangy flavors with peaches, ginger, and spices, perfect for serving with grilled meats, cheeses, or as a condiment for special occasions.

Ingredients

  • 1 medium onion, chopped fine
  • 1 clove garlic, minced
  • 1 cup seedless raisins, chopped
  • 8 pounds Georgia peaches, peeled and chopped
  • 2 tablespoons mustard seed
  • 2 tablespoons chili powder
  • 1 cup crystallized ginger, chopped
  • 1 teaspoon salt
  • 1 quart vinegar

Instructions

  1. Combine all ingredients in a Dutch oven.
  2. Bring to a boil and simmer uncovered for 1 hour and 15 minutes or until mixture is thickened and deep brown.
  3. Pour hot chutney into hot, clean canning jars leaving 1/2-inch headspace.
  4. Remove air bubbles from the jars.
  5. Wipe jar rims clean.
  6. Adjust lids and rings on the jars.
  7. Process jars in a boiling water bath for 10 minutes.
  8. Remove jars from water and let cool.
