Ingredients

  • 2/3 cup butter
  • 2/3 cup sugar
  • 3/4 cup powdered sugar
  • 3 eggs, separated
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 2 cups sifted cake flour
  • 1 1/2 teaspoons baking powder
  • pinch of salt
  • 2/3 cup milk
  • almonds

Instructions

  1. Cream the butter and sugars together until light and fluffy.
  2. Add the egg yolks one at a time, mixing well after each addition.
  3. Mix in the vanilla and almond extracts.
  4. In a separate bowl, sift together the cake flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk, beginning and ending with the dry ingredients.
  6. In a clean bowl, beat the egg whites until stiff peaks form, then gently fold into the batter.
  7. Grease and flour a Bundt pan, then embed an almond in each crease of the pan.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake at 350°F (175°C) for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for a few minutes before turning out onto a wire rack.
