Ingredients

  • 3 large potatoes, sliced thin
  • 5 carrots, chopped
  • 1 small onion, diced
  • 2 Tbsp butter
  • 2 lb ground beef
  • 1 Tbsp catsup
  • 1 (10 1/2 oz) can cream of mushroom soup
  • 1 (4 oz) can button mushrooms, drained

Instructions

  1. Parboil the sliced potatoes and chopped carrots for 20 minutes.
  2. Sauté the diced onion in butter until translucent.
  3. Add ground beef to the onion and cook until it turns gray.
  4. Butter a 2 1/2-quart casserole dish.
  5. Alternate layers of the beef-onion mixture and the parboiled vegetables in the casserole.
  6. Mix catsup with the cream of mushroom soup and pour over the layered casserole.
  7. Sauté the button mushrooms in 3 tablespoons of butter until browned.
  8. Place the sautéed mushrooms on top of the casserole.
  9. Sprinkle onion rings over the top.
  10. Bake at 350°F for about 20 minutes or until the onion rings are brown and crisp.
