Ingredients

  • 1 lb hamburger
  • 1/2 medium onion, chopped
  • 1/2 green pepper, diced
  • salt to taste
  • pepper to taste
  • 2 Tbsp butter or margarine
  • 6 medium potatoes, peeled and shredded
  • 3 eggs, beaten
  • 1/2 c milk
  • 2 c shredded cheese

Instructions

  1. In a 12-inch skillet over medium heat, brown hamburger with chopped onion, diced green pepper, salt, and pepper.
  2. Remove the meat mixture from the skillet and drain excess fat.
  3. Reduce heat to low.
  4. Melt butter in the skillet, then spread shredded potatoes over the melted butter and sprinkle with salt.
  5. Top the potatoes with the cooked beef mixture.
  6. In a bowl, beat eggs and milk together, then pour over the layered ingredients in the skillet.
  7. Cover and cook until potatoes are tender, about 30 minutes.
  8. Sprinkle shredded cheese over the top.
  9. Cover and heat until cheese is melted, about 5 minutes.
