Ingredients

  • 2 gallons tomatoes
  • 18 ears corn
  • 3 cups butter beans
  • 4 large onions
  • 1 pound carrots
  • 3 cups okra
  • 3 pods hot peppers
  • 3 large bell peppers
  • 1/2 cup dark vinegar
  • 1 cup sugar
  • 1/4 cup salt

Instructions

  1. Peel tomatoes and quarter them into a dishpan.
  2. Cut off the corn and add it to the tomatoes.
  3. Add minced onions, butter beans, carrots, okra, hot peppers, bell peppers, vinegar, sugar, and salt.
  4. Simmer the mixture for about thirty minutes.
  5. Pour the hot soup into clean, sterilized quart jars.
  6. Can the jars on 10 pounds pressure for fifteen minutes.
