Ginger-Nut Chicken(Microwave)

Ingredients

  • 1 Tbsp. butter or margarine
  • 2 chicken breast halves, skinned and boned
  • 1 1/2 c. broccoli, cut into 1 1/2 inch pieces
  • 1/2 c. green onions, cut into 1 inch pieces
  • 1/2 c. celery, cut into 1 inch pieces
  • 3 (1/8 inch) slices ginger root
  • 2 Tbsp. cornstarch
  • 1/2 c. water, divided
  • 1 Tbsp. soy sauce
  • 1/4 tsp. lemon pepper seasoning
  • 1/8 tsp. garlic salt
  • 1/3 c. dry roasted peanuts
  • hot cooked rice

Instructions

  1. Place
  2. butter
  3. in a 1 1/2 quart casserole dish.
  4. Microwave at High for 45 seconds or until melted.
  5. Cut chicken into bite-size pieces.
  6. Add to casserole.
  7. Coat with butter.
  8. Cover and microwave
  9. at
  10. High
  11. 4 minutes, stirring after 2 minutes. Add broccoli,
  12. onions,
  13. celery and ginger root.
  14. Microwave at High for 2 minutes.
