Ginger-Nut Chicken(Microwave)
Ingredients
- 1 Tbsp. butter or margarine ⓘ
- 2 chicken breast halves, skinned and boned ⓘ
- 1 1/2 c. broccoli, cut into 1 1/2 inch pieces ⓘ
- 1/2 c. green onions, cut into 1 inch pieces
- 1/2 c. celery, cut into 1 inch pieces ⓘ
- 3 (1/8 inch) slices ginger root ⓘ
- 2 Tbsp. cornstarch ⓘ
- 1/2 c. water, divided ⓘ
- 1 Tbsp. soy sauce ⓘ
- 1/4 tsp. lemon pepper seasoning ⓘ
- 1/8 tsp. garlic salt ⓘ
- 1/3 c. dry roasted peanuts ⓘ
- hot cooked rice ⓘ
Instructions
- Place
- butter
- in a 1 1/2 quart casserole dish.
- Microwave at High for 45 seconds or until melted.
- Cut chicken into bite-size pieces.
- Add to casserole.
- Coat with butter.
- Cover and microwave
- at
- High
- 4 minutes, stirring after 2 minutes. Add broccoli,
- onions,
- celery and ginger root.
- Microwave at High for 2 minutes.
