Ingredients

  • 6 medium carrots
  • 2 tsp lemon juice
  • 3/4 tsp salt
  • 1/2 tsp ground ginger
  • dash pepper
  • 2 Tbsp margarine

Instructions

  1. Peel the carrots and cut them into 1/2-inch slices.
  2. Place the sliced carrots in a buttered 1-quart casserole dish.
  3. Mix lemon juice, salt, ground ginger, and pepper; pour the mixture over the carrots.
  4. Dot the carrots with margarine.
  5. Cover the dish and bake in a preheated oven at 400°F (200°C) for 1 hour, or until the carrots are tender.
