Ingredients

  • 1 lb. carrots, scraped and sliced
  • 2 Tbsp. water
  • 1/4 cup chopped onion
  • 1 Tbsp. butter or margarine
  • 1/4 tsp. ground nutmeg
  • 1 Tbsp. brown sugar
  • 1 Tbsp. honey
  • 1 Tbsp. frozen orange juice concentrate
  • 1/8 tsp. dried whole thyme

Instructions

  1. Combine carrots and water in a 1 1/2-quart casserole. Cover with heavy-duty plastic wrap and vent.
  2. Microwave on High for 5 to 10 minutes or until carrots are tender, stirring once.
  3. Combine chopped onion, butter, and ground nutmeg in a small bowl; microwave on High for 30 seconds to 1 minute or until onion is tender and transparent.
  4. Add brown sugar, honey, frozen orange juice concentrate, and dried thyme to the onion mixture and stir well; microwave on High for 1 to 2 minutes.
  5. Add the onion mixture to the cooked carrots, tossing gently to coat.
