Ingredients

  • 1 1/2 c. yellow self-rising corn meal
  • 1/2 c. self-rising flour
  • 2 to 4 Tbsp. sugar
  • 1 c. buttermilk
  • 1/4 c. cooking oil

Instructions

  1. Preheat oven to 425°F and grease an 8-inch square baking dish or a 10-inch skillet.
  2. In a bowl, stir together the corn meal, flour, and sugar.
  3. In a separate medium-sized bowl, beat the eggs with a fork just enough to blend yolks and whites.
  4. Stir the buttermilk and cooking oil into the eggs until combined.
  5. Add the dry ingredients to the wet ingredients and stir to blend thoroughly; beat just until smooth.
  6. Pour the batter into the greased pan and bake for about 25 minutes until golden brown.
