Ingredients

  • 9 large potatoes, peeled and cubed
  • 1 lb. carrots, cut into chunks
  • 1/2 cup butter, melted
  • 1 cup sour cream
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 3/4 cup shredded cheese

Instructions

  1. Cook potatoes and carrots in salted water until tender.
  2. Drain and place in a mixing bowl.
  3. Add melted butter, sour cream, salt, and pepper.
  4. Mix until well blended.
  5. Transfer to a greased 13 x 9 x 2-inch casserole dish.
  6. Sprinkle with shredded cheese.
  7. Bake at 350°F for 30 to 40 minutes until hot and bubbly.
