Ingredients

  • 4 eggs
  • 3/4 cup sugar
  • 1 package Knox unflavored gelatine
  • 1 1/2 tablespoons dry mustard
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon salt
  • 1 cup water
  • 1 cup whipping cream
  • 1/2 cup cider vinegar

Instructions

  1. Beat eggs in the top of a double boiler until well combined.
  2. Mix sugar and gelatine together in a bowl. Stir in dry mustard, turmeric, and salt.
  3. Add water and vinegar to the beaten eggs, then stir in the sugar and gelatine mixture.
  4. Cook over boiling water, stirring constantly, until the mixture is slightly thickened.
  5. Cool until the mixture is thickened.
  6. Whip the cream until stiff peaks form and fold it into the cooled mixture.
  7. Turn the mixture into a 1 1/2-quart mold sprayed with Pam.
  8. Chill until the souffle is firm.
  9. Arrange stuffed eggs around the mold and place olives in the center for an attractive presentation.
