Ingredients

  • 3 English muffins
  • 4 oz. shredded Cheddar cheese
  • 4 oz. shredded Swiss cheese
  • 1/2 cup chopped green onions
  • 9 slices bacon
  • 11 oz. can Green Giant Mexicorn
  • 2 cups milk
  • 8 eggs
  • 1 teaspoon dry mustard
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 9 x 13-inch baking dish.
  3. Place muffin halves, split side up, in the bottom of the dish.
  4. Beat eggs in a bowl.
  5. Combine shredded Cheddar and Swiss cheeses, chopped green onions, crumbled bacon, and drained Mexicorn in a separate bowl.
  6. Spoon the cheese and corn mixture over the muffin halves, ensuring the bottom of the dish is completely covered.
  7. Pour the beaten eggs evenly over the layered ingredients.
  8. Bake in the preheated oven for approximately 30 minutes or until set and golden brown.
