Golden Rod Eggs features creamy white sauce with minced egg whites and grated yolks, served over toast. A comforting, savory dish perfect for brunch or light lunch.

Ingredients

  • 4 hard-cooked eggs
  • 6 slices toast
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • 1/2 tsp. salt
  • pepper

Instructions

  1. Scald the milk.
  2. Melt the butter and add the flour and seasonings.
  3. Gradually add the hot milk, stirring constantly.
  4. Cook until the mixture forms a thin gravy.
  5. Peel the hard-cooked eggs.
  6. Mince the egg whites finely and season.
  7. Add the minced egg whites to the white sauce.
  8. Pour the mixture over toasted bread slices.
  9. Grate the egg yolks or put them through a sieve.
  10. Sprinkle the grated yolks over the toast and sauce.
  11. Garnish with parsley.
