Ingredients

  • 6 eggs
  • 3/4 tsp. cream of tartar
  • 1 1/2 c. sugar
  • 2 Tbsp. sugar
  • 1 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 c. water
  • 1 tsp. Watkins orange flavored unsweetened punch concentrate
  • 1 tsp. Watkins lemon extract
  • 3/4 tsp. Watkins rum extract
  • 1/3 c. Watkins vanilla dessert mix
  • 2 Tbsp. apricot preserves
  • 1 1/2 c. water
  • 2 Tbsp. butter

Instructions

  1. Separate eggs, placing whites in a large mixer bowl and yolks in a small bowl.
  2. Add cream of tartar to the egg whites and beat at high speed until foamy.
  3. Gradually add 3/4 cup of sugar to the whites and beat until stiff.
  4. To the egg yolks, add flour, 3/4 cup plus 2 tablespoons sugar, salt, water, orange concentrate, and extracts.
  5. Blend at low speed until moistened, then beat for 1 minute at medium speed.
  6. Gently fold the yolk mixture into the whites by hand until well blended.
  7. Pour the batter into an ungreased 10-inch tube pan.
  8. Bake at 350°F for 50 to 55 minutes, until the top springs back when lightly touched.
  9. Invert the pan and cool the cake.
