Ingredients

- 3/4 tsp. cream of tartar ⓘ
- 1 1/2 c. sugar ⓘ
- 2 Tbsp. sugar
- 1 1/2 c. all-purpose flour ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 c. water ⓘ
- 1 tsp. Watkins orange flavored unsweetened punch concentrate ⓘ
- 1 tsp. Watkins lemon extract
- 3/4 tsp. Watkins rum extract ⓘ
- 1/3 c. Watkins vanilla dessert mix ⓘ
- 2 Tbsp. apricot preserves ⓘ
- 1 1/2 c. water ⓘ
- 2 Tbsp. butter ⓘ
Instructions
- Separate eggs, placing whites in a large mixer bowl and yolks in a small bowl.
- Add cream of tartar to the egg whites and beat at high speed until foamy.
- Gradually add 3/4 cup of sugar to the whites and beat until stiff.
- To the egg yolks, add flour, 3/4 cup plus 2 tablespoons sugar, salt, water, orange concentrate, and extracts.
- Blend at low speed until moistened, then beat for 1 minute at medium speed.
- Gently fold the yolk mixture into the whites by hand until well blended.
- Pour the batter into an ungreased 10-inch tube pan.
- Bake at 350°F for 50 to 55 minutes, until the top springs back when lightly touched.
- Invert the pan and cool the cake.
