Ingredients

  • 1/2 cup brown sugar, packed
  • 1/3 cup slivered almonds
  • 1/2 cup coconut
  • 1 (29 oz.) can peach or apricot halves, drained
  • 2 cups biscuit mix
  • 1 cup sour cream
  • 1/4 cup sugar
  • 2 tablespoons margarine, melted
  • 1 egg
  • dash of lemon juice

Instructions

  1. Grease a 9-inch round layer pan with shortening or margarine.
  2. Sprinkle the bottom with brown sugar, slivered almonds, and coconut.
  3. Arrange drained peach or apricot halves on top of the sprinkled mixture.
  4. In a mixing bowl, stir biscuit mix, sour cream, sugar, melted margarine, egg, and lemon juice just until blended.
  5. Beat well for about 30 seconds.
  6. Spread the mixture evenly over the fruit in the prepared pan.
  7. Bake in a preheated oven at 400°F (200°C) for 20 to 25 minutes.
  8. Cool for 5 minutes, then turn out onto a serving plate.
