Ingredients

  • 1 cup candied pineapple, chopped
  • 1½ cups Brazil nuts, halved
  • 2 cups pecans, chopped
  • 1 cup white corn syrup
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup candied cherries, halved
  • 1½ cups coarsely chopped English walnuts
  • 3 cups white sugar
  • 1½ cups light cream or half and half

Instructions

  1. Fix fruit and nuts; set aside.
  2. Combine sugar, syrup, cream, and salt in a saucepan; bring to a boil, stirring until all sugar is dissolved.
  3. Stop stirring and continue boiling until the mixture reaches 231°F (medium hard ball stage) in cold water.
  4. Remove from heat and beat immediately with an electric mixer.
  5. Beat until thick and creamy and the candy holds its form.
  6. Add vanilla, candied fruit, and nuts to the mixture.
  7. Press the mixture into glass pans or pans lined with foil.
  8. Let cool, then cut into pieces.
  9. Store in an airtight container; keeps for weeks. Better as it ages.
