- Fix fruit and nuts; set aside.
- Combine sugar, syrup, cream, and salt in a saucepan; bring to a boil, stirring until all sugar is dissolved.
- Stop stirring and continue boiling until the mixture reaches 231°F (medium hard ball stage) in cold water.
- Remove from heat and beat immediately with an electric mixer.
- Beat until thick and creamy and the candy holds its form.
- Add vanilla, candied fruit, and nuts to the mixture.
- Press the mixture into glass pans or pans lined with foil.
- Let cool, then cut into pieces.
- Store in an airtight container; keeps for weeks. Better as it ages.
