Ingredients

  • 1 large apple, cored, pared, and finely chopped
  • 1 2/3 cups flour, sifted
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon honey
  • 1/4 cup sugar
  • 1 beaten egg
  • 2/3 cup milk
  • 1/4 cup oil
  • 1 teaspoon cinnamon
  • 6 tablespoons confectioners sugar

Instructions

  1. Preheat the oven to 375°F (190°C). Grease 2 muffin tins liberally.
  2. In a bowl, combine sifted flour, baking powder, cinnamon, salt, and sugar.
  3. In another bowl, mix honey, beaten egg, milk, and oil.
  4. Add the egg mixture to the flour mixture and stir until just combined.
  5. Fold in the finely chopped apple.
  6. Pour the batter into the prepared muffin tins, filling each cup about 2/3 full.
  7. Bake for 20 to 25 minutes until golden and a toothpick inserted into the center comes out clean.
  8. Remove the tins from the oven and let stand for 5 minutes.
  9. Use a greased knife to loosen and tap the muffins out of the tins.
  10. Sprinkle with confectioners sugar before serving.
