Ingredients

  • 5 eggs
  • 8 oz. cream cheese
  • 1 green bell pepper
  • 1 green onion
  • 1 1/2 Tbsp. mayonnaise
  • salt
  • pepper

Instructions

  1. Place 5 eggs in a boiler, cover with cool water, add 1 teaspoon salt, and bring to a boil.
  2. Let the eggs boil for 15 minutes.
  3. Remove from heat and pour off the hot water.
  4. Peel and chop the boiled eggs.
  5. In a mixing bowl, combine the chopped eggs, softened cream cheese, finely chopped green bell pepper, and finely chopped green onion.
  6. Add 1 1/2 tablespoons mayonnaise, salt, and pepper to taste.
  7. Mix until well combined.
  8. Serve the spread with crackers.
