Ingredients

  • 3/4 cup warm water
  • 1 packet dry yeast
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup soft shortening
  • 2 1/4 cups flour
  • 1 1/2 cups powdered sugar
  • 4 tablespoons cream
  • 1/2 cup coconut
  • 3/4 cup chopped pecans

Instructions

  1. Dissolve yeast in warm water.
  2. Add sugar, salt, and half the flour; beat for 2 minutes.
  3. Add egg, shortening, vanilla, and remaining flour; mix well.
  4. Drop spoonfuls of batter into a greased pan.
  5. Cover and let rise until doubled in size.
  6. Bake in a 375°F oven until golden brown.
  7. Remove from oven and let cool slightly.
  8. Mix powdered sugar, cream, coconut, and pecans to make topping.
  9. Spread topping on the hot cake immediately.
