A hearty meat loaf with tender vegetables, infused with ketchup and Worcestershire sauce, perfect for comforting family dinners and versatile for various occasions.

Ingredients

  • 1 lb ground beef
  • 2/3 cup Pet evaporated milk
  • 1/3 cup dry bread crumbs
  • 1/4 cup ketchup or chili sauce
  • 1 teaspoon salt
  • 1 to 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon pepper
  • 3 potatoes
  • 3 onions
  • 3 carrots

Instructions

  1. With wet hands, mix all the ingredients and shape into a loaf.
  2. Place in the center of a 9 x 13-inch dish.
  3. Peel and slice 3 medium potatoes and 3 onions into 1/4-inch thick slices.
  4. Peel quarter lengthwise or slice the 3 carrots.
  5. Put vegetables around the meat loaf.
  6. Cover tightly with foil.
  7. Bake at 375°F for 1 hour or until vegetables are tender.
  8. Uncover and bake for 10 minutes more to brown the meat loaf.
