Ingredients

  • 2 cups elbow macaroni
  • 1 (12 oz.) can corn
  • 1 onion, chopped
  • 2 cans tomato sauce or 1 small can tomatoes
  • 1 can water
  • 1 lb. ground beef
  • Grated cheese for topping
  • 1 bell pepper, chopped

Instructions

  1. Cook macaroni as directed on the package.
  2. Melt margarine in a large skillet.
  3. Add chopped onion, chopped bell pepper, and ground beef; sauté until tender.
  4. Add tomato sauce, 1/2 teaspoon of salt, and 1/8 teaspoon of pepper; simmer for 20 minutes.
  5. Combine the cooked macaroni and drained corn with the meat mixture.
  6. Transfer the mixture into a 2-quart casserole or Pyrex pan.
  7. Bake in a preheated oven at 350°F for 30 minutes.
  8. During the last 10 minutes of baking, top with grated cheese.
