Goulash Soup

Ingredients

  • 1 medium onion
  • 4 Tbsp. margarine
  • 3 to 4 Tbsp. Hungarian paprika
  • 3/4 to 1 lb. cubed beef
  • 2 cans beef broth
  • 1 can water
  • 1 small can tomato sauce
  • 1 small can tomato sauce

Instructions

  1. Saute diced onion in 4 tablespoons margarine until tender.
  2. Add paprika and cook until bubbly.
  3. Set the paprika mixture aside in a bowl.
  4. In the same pan, melt 4 tablespoons margarine and add cubed beef, which has been floured.
  5. Cook until browned.
  6. Add the onion and paprika mixture back into the pan.
  7. Pour in two cans of beef broth and one can of water.
  8. Heat to boiling, stirring occasionally.
  9. Add tomato sauce and another can of water.
  10. Bring to a boil again, then add diced potatoes.
  11. Reduce heat to simmer.
  12. Let simmer for at least 2 to 4 hours until flavors meld and beef is tender.
