Ingredients

  • 1 can black bean, drained
  • 1 can white kernel corn, drained
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 large tomato, deseeded and diced
  • 1 small onion, diced
  • cilantro, chopped, to taste
  • 1 avocado, diced (optional)
  • 8 oz. Mexican cheese (Jalapeno Havarti, Pepper Jack), shredded
  • tortilla chips

Instructions

  1. Combine all ingredients except avocado in a saucepan.
  2. Heat over medium heat until the cheese is melted, stirring occasionally.
  3. Add diced avocado and stir to combine.
  4. Serve immediately with tortilla chips.
