Gourmet Bean & Veggie Dip
A vibrant, cheesy bean and veggie dip packed with fresh flavors and heat, perfect for parties, snacking, or casual gatherings with tortilla chips.
Ingredients
- 1 can black bean, drained ⓘ
- 1 can white kernel corn, drained ⓘ
- 1 green bell pepper, diced ⓘ
- 1 red bell pepper, diced ⓘ
- 1 large tomato, deseeded and diced ⓘ
- 1 small onion, diced ⓘ
- cilantro, chopped, to taste ⓘ
- 1 avocado, diced (optional) ⓘ
- 8 oz. Mexican cheese (Jalapeno Havarti, Pepper Jack), shredded ⓘ
- tortilla chips ⓘ
Instructions
- Combine all ingredients except avocado in a saucepan.
- Heat over medium heat until the cheese is melted, stirring occasionally.
- Add diced avocado and stir to combine.
- Serve immediately with tortilla chips.
