Grady'S Broccoli Cheese Soup

Ingredients

  • 1 medium onion, chopped
  • 1 (10 oz.) pkg. broccoli, cooked
  • 4 Tbsp. flour
  • 2 c. milk
  • 1/8 tsp. nutmeg
  • 1/8 tsp. garlic powder
  • 3 Tbsp. butter
  • 4 Tbsp. parsley, chopped
  • 2 c. chicken broth
  • 2 Tbsp. lemon juice
  • 1/8 tsp. lemon pepper
  • 2 lb. Velveeta cheese, melted

Instructions

  1. In a heavy pot, saute onion until limp.
  2. Add broccoli and parsley and simmer 3 minutes.
  3. While stirring, sprinkle in flour and stir until absorbed.
  4. Transfer to blender and add chicken broth.
  5. Blend until liquified.
  6. Return to pot and add remaining ingredients.
  7. This can be frozen.
