Grain Salad

Ingredients

  • Salad
  • 1 bunch cilantro
  • 1/2 bunch parsley
  • 1/2 red onion
  • 1c cracked wheat
  • 1 can lentils or chickpeas
  • 2 T toasted pumpkin seeds
  • 2 T toasted slivered almonds
  • 2 T toasted pine nuts
  • 2 T capers
  • 1/2c currants
  • juice of one lemon
  • 3 T olive oil
  • salt
  • Topping

Instructions

  1. Cook cracked wheat as directed. Drain lentils. Chop cilantro, parsley, and red onion. Mix all salad ingredients together. Mix topping ingredients.
  2. Serve salad with dollop of yogurt mixture.
