Ingredients

  • 2 eggs
  • 2 Tbsp. sugar
  • 1 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 2/3 c. cornmeal
  • 1 c. buttermilk
  • 1/4 c. melted butter or oil

Instructions

  1. Beat eggs.
  2. Add sugar.
  3. Sift dry ingredients and add alternately with buttermilk to egg mixture.
  4. Add the butter and bake in 8 to 10-inch cast-iron skillet.
  5. Bake at 400° for 25 minutes.
