  • 8 large onions
  • 10 green bell peppers
  • 3 Tbsp. salt
  • 6 hot peppers
  • 1 qt. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/4 tsp. cloves
  • 3 Tbsp. dry mustard
  • few bay leaves
  • 1 3/4 cups sugar

Instructions

  1. Chop tomatoes, onions, and green peppers together and let stand. Drain well.
  2. Add chopped hot peppers, vinegar, spices (tied in cheesecloth), and mix well.
  3. Allow to boil slowly until tender, about 15 minutes.
  4. Pack the hot mixture tightly into sterilized Mason or Kerr canning jars and seal immediately.

Tips & Substitutions

For a spicier chow chow, feel free to increase the number of hot peppers. If green tomatoes are unavailable, you can substitute with unripe red tomatoes. Be sure to drain the chopped vegetables well to avoid excess liquid in your final product. Using a mix of vinegars can add depth; try apple cider vinegar for a slightly sweeter taste.

Serving Suggestions

Grandma Marley's Chow Chow is a delightful addition to sandwiches, burgers, or as a tangy side for grilled meats. It pairs beautifully with Sweet And Sour Kraut Salad. For a unique twist, try serving it alongside a charcuterie board or as a condiment for tacos, enhancing the flavors of your dishes.

Storage & Reheating

Store any leftover chow chow in sealed jars in the refrigerator for up to three months. For longer storage, ensure jars are properly sealed and processed in a water bath for preservation. To enjoy, simply spoon out the desired amount and serve cold or at room temperature; there's no need to reheat.

Frequently Asked Questions

Can I use ripe tomatoes instead of green tomatoes?

While green tomatoes are traditional and provide the unique tartness for chow chow, you can use firm, unripe red tomatoes as a substitute. The flavor will differ slightly, being less tangy, but it will still create a delicious relish.

How long does chow chow need to sit before serving?

For the best flavor, it's ideal to let the chow chow sit for at least 24 hours after canning. This resting period allows the spices to meld and the flavors to develop, making it even more delicious when served.

Is it necessary to use cheesecloth for the spices?

Yes, using cheesecloth to tie your spices keeps them contained, making it easy to remove them after cooking. This method prevents any gritty texture in your chow chow and ensures a smooth and enjoyable relish.
