Ingredients

  • 1 to 2 lb. beef, cut up
  • 8 c. water
  • 1/2 c. macaroni shells
  • 2 to 4 potatoes, diced
  • 3 to 5 carrots, diced
  • 1/3 c. barley
  • 1 onion, diced
  • 1 c. peas, fresh or frozen

Instructions

  1. Cook beef in water until done, then add remaining ingredients.
  2. Add a little more or less of the veggies you like or dislike.
  3. Season with salt and pepper to taste, about 1/2 teaspoon of each.
  4. Once the meat is cooked, add the veggies and fill the cooker with water just over the veggies.
  5. Bring to a boil and then simmer for at least 15 to 20 minutes.
  6. Serve hot. The soup is great warmed over and is low in fat.

Tips & Substitutions

For added flavor, consider browning the beef before adding the water. You can substitute beef with chicken or vegetable broth for a lighter option. If you prefer a thicker soup, increase the amount of barley or add a can of diced tomatoes. Adjust the veggies based on your preference; zucchini or green beans can also be great additions.

Serving Suggestions

Serve this comforting soup with crusty bread or a light salad for a complete meal. It pairs beautifully with dishes like Sweet And Sour Beef Brisket for a heartier dinner. For a garnish, try adding fresh parsley or a sprinkle of grated cheese to enhance the flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm on the stove over medium heat, adding a splash of water if it thickens too much. This soup also freezes well for up to 3 months; just thaw before reheating.

Frequently Asked Questions

Can I use ground beef instead of cut-up beef?

Yes, using ground beef is a great alternative. Just be sure to brown it thoroughly before adding the water and other ingredients to enhance the flavor. Cook until no longer pink, then proceed with the recipe as directed.

What can I do if my soup is too salty?

If your soup turns out too salty, consider adding more water or low-sodium broth to dilute it. You can also add additional vegetables or a few extra potatoes, which can help absorb some of the saltiness.

Is this soup suitable for a gluten-free diet?

This soup is not gluten-free due to the macaroni shells. To make it gluten-free, simply replace the macaroni with gluten-free pasta or omit it altogether. You can also increase the barley or add a different gluten-free grain.
