Ingredients

  • 1 cup sugar
  • 2/3 cup melted margarine
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup grated carrots
  • 1 cup pecans

Instructions

  1. Mix sugar, melted margarine, and beaten eggs together.
  2. Sift together flour, cinnamon, baking soda, baking powder, and salt.
  3. Add the flour mixture to the wet ingredients and mix well.
  4. Fold in grated carrots and chopped pecans.
  5. Pour the batter into a greased bread pan.
  6. Bake at 325°F (163°C) for 1 hour or until a toothpick inserted in the center comes out clean.
