Ingredients

  • 18 graham crackers or 1 cup crumbs
  • 2 Tbsp. sugar
  • 3/4 stick butter
  • 3 pkg. cream cheese (8 oz. each)
  • 3/4 cup sugar
  • 3 eggs
  • 2 Tbsp. lemon juice
  • pinch of salt
  • 2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs and 2 Tbsp. sugar in a bowl.
  3. Add melted butter and mix until well combined.
  4. Press the mixture firmly into the bottom of a spring-form pan to form the crust.
  5. In a separate bowl, beat the cream cheese until smooth.
  6. Add 3/4 cup sugar, beaten eggs, lemon juice, and a pinch of salt to the cream cheese. Mix well.
  7. Spread the cream cheese mixture evenly over the crust.
  8. Bake in the preheated oven for about 45-50 minutes, or until set.
  9. Remove from oven and let cool.
  10. Spread sour cream over the cooled cheesecake before serving.
