- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs and 2 Tbsp. sugar in a bowl.
- Add melted butter and mix until well combined.
- Press the mixture firmly into the bottom of a spring-form pan to form the crust.
- In a separate bowl, beat the cream cheese until smooth.
- Add 3/4 cup sugar, beaten eggs, lemon juice, and a pinch of salt to the cream cheese. Mix well.
- Spread the cream cheese mixture evenly over the crust.
- Bake in the preheated oven for about 45-50 minutes, or until set.
- Remove from oven and let cool.
- Spread sour cream over the cooled cheesecake before serving.
