Ingredients

  • cornbread
  • 1 loaf white bread
  • chicken or turkey neck and giblets
  • boiling salted water
  • broth
  • 1 egg
  • 1 1/2 cup finely chopped onion
  • 1 1/2 cup finely chopped celery
  • 1 teaspoon sage
  • salt and pepper to taste

Instructions

  1. Cook the cornbread and let it cool.
  2. Break and crumble the cornbread into a large container.
  3. Toast the white bread loaf and crumble it into the container with the cornbread.
  4. Cook the chicken or turkey neck and giblets in boiling salted water until done, about 2 1/2 hours.
  5. Remove the giblets, dice them finely, and add to the crumbled bread mixture.
  6. Add the finely chopped onions and celery to the mixture.
  7. In a separate bowl, beat the egg and add it to the mixture along with broth, sage, salt, and pepper.
  8. Mix all ingredients thoroughly and stuff into a baking dish.
  9. Bake in a preheated oven at 350°F (175°C) until heated through and golden on top, about 30-40 minutes.
